Valpolicella superiore ‘Monte Lodoletta’ 2011 – Dal Forno Romano After 45 days of appassimento, the grapes are pressed, fermenting first in stainless steel at a controlled temperature, then resting in new barriques for 36 months. The Valpolicella Superiore DOC, labeled Dal Forno Romano, is completed with two years of bottle aging. It is the younger brother of Amarone, but it certainly isn’t 'lesser'.
