Apodiano Rimini DOP Cabernet Sauvignon is the second red in Tenuta Sant'Aquilina's trio of selections, alongside the Borgazzano aged Sangiovese. Apodiano is the ancient name of the hill on whose slopes our Cabernet Sauvignon vineyard grows, a grape variety perfectly suited to our terroir and yielding intense, refined wines. Territoriality is the underlying theme of our wines, starting with the choice of name and label, which features Rimini's Arch of Augustus with blue details. The Apodiano vineyard is a square plot of just under one hectare, planted in 2007 on a gentle, south-facing slope. Here, Cabernet Sauvignon thrives, reaching high levels with every harvest, with numerous small, sparse clusters. As befits this variety, it ripens later than other grapes, and the harvest often concludes in this very vineyard. Yield is never abundant, and vine health is a strong point of the grape, which has proven to withstand any phytosanitary problem year after year. The grapes are fermented in steel tanks, followed by a period of aging in large oak barrels. The length of aging can vary depending on the vintage, but in any case, it lasts at least 12 months. The aging in wood helps smooth out the vegetal and wild notes typical of the variety, softening the wine and creating an ideal combination on both the nose and palate. Apodiano Rimini DOP Cabernet Sauvignon displays a brilliant ruby ​​color with purple highlights. This Cabernet Sauvignon is not only characterized by its body, certainly worthy of the type, but also by much more. The nose features clear and fresh vegetal notes, accompanied by an intriguing balsamic note that is ever-present but never overpowering. On the palate, the freshness is complemented by just the right amount of tannin and a rounded, comfortable warmth.
