Caol Ila 2006/2018 - The Distillers Edition, 43%, 700ml, Cask number C-si; 5-478 Caol Ila single malts were available only through independent bottlers until the Caol Ila 12 Year Old was launched in 2002. The barley used is malted at Port Ellen, and the stills—which are much larger than those at other Islay distilleries—are filled only halfway to allow for greater contact between the alcohol vapor and the copper; this is why Caol Ila expressions are far less peaty than other Islay malts, possessing instead a subtle, smoky character. Occasionally, unpeated versions are also produced. The 2006 Distiller's Edition is 12 years old, double-matured in Moscatel casks, and bottled in 2018. The cask number is C-si: 5-478. Nose: Subtle smoke and maritime salt with sweet, sherried Moscatel notes. Palate: Caol Ila peat and coastal character softened by rich dried-fruit sweetness and gentle sherry spice. Finish: Long, smoky and saline, with lingering sweet wine and oak notes.
